Ingredients
  

Sweet Potato

  • 1 each large sweet potato
  • 0.5 teaspoon cinnamon
  • 0.25 teaspoon salt
  • 0.5 teaspoon vanilla extract
  • 1 tablespoon maple syrup (optional)
  • 0.25 cup walnuts (chopped)
  • 1 cup plain Greek yogurt

Instructions
 

  • Pressure cook the sweet potato for 12 minutes, then let cool and mash.
  • Mix in cinnamon, salt, vanilla, maple syrup, and stir in 2 tbsp walnuts.
  • Divide the mashed sweet potato into 3 jars.
  • Top each with 1/3 cup Greek yogurt and remaining walnuts.

Notes

For extra flavor, add a drizzle of honey or additional nuts.
