Instructions
Preheat oven to 425°F and line a baking sheet.
Toss sweet potatoes with 1 tbsp olive oil, 1 tsp salt, 0.5 tsp pepper, paprika, and cumin. Roast 25-30 mins.
Sauté onion in 1 tbsp olive oil until soft, add garlic, then cook until fragrant.
Brown ground beef, stir in tomato paste and oregano, cook 1 min. Add remaining salt, pepper, and vinegar.
Mix in spinach until wilted. Assemble bowls with sweet potatoes and beef, drizzle with finishing oil.
Notes
For extra flavor, add a squeeze of lime or hot sauce before serving.
