Ingredients
  

Protein

  • 4 pieces boneless, skinless chicken thighs

Vegetables

  • 2 medium sweet potatoes peeled and cut into 1-inch cubes

Aromatics & Condiments

  • 4 cloves garlic, minced
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp olive oil plus extra for greasing
  • 1 tsp dried thyme or fresh thyme leaves

Seasonings

  • to taste Salt and pepper

Garnish

  • for garnish Fresh parsley or chives, chopped

Optional

  • optional sliced mushrooms or onions

Instructions
 

  • Preheat oven to 400°F (200°C). Grease a baking dish.
  • Mix honey, soy sauce, garlic, olive oil, thyme, salt, and pepper to make the sauce.
  • Spread sweet potatoes (and optional mushrooms/onions) in the dish. Place chicken on top.
  • Drizzle sauce over chicken and potatoes. Bake for 25-30 minutes until chicken reaches 165°F and potatoes are tender.
  • Optional: Broil for 2-3 minutes for caramelization. Garnish with parsley or chives before serving.

Notes

Ensure chicken reaches an internal temperature of 165°F for safety.
