Instructions
Preheat oven to 400°F (200°C). Grease a baking dish.
Mix honey, soy sauce, garlic, olive oil, thyme, salt, and pepper to make the sauce.
Spread sweet potatoes (and optional mushrooms/onions) in the dish. Place chicken on top.
Drizzle sauce over chicken and potatoes. Bake for 25-30 minutes until chicken reaches 165°F and potatoes are tender.
Optional: Broil for 2-3 minutes for caramelization. Garnish with parsley or chives before serving.
Notes
Ensure chicken reaches an internal temperature of 165°F for safety.
