Instructions
Cook the chicken chunks in a skillet until browned, then toss with 2/3 cup BBQ sauce.
Cook rice according to package instructions.
Mix black beans with lime juice and season with salt if desired.
Slice avocado and scallions for topping.
Assemble bowls with rice, BBQ chicken, beans, avocado, and scallions. Drizzle mayo mixed with BBQ sauce and water over the top.
Notes
For extra flavor, marinate the chicken in BBQ sauce for 30 minutes before cooking.
