Ingredients
  

Chicken

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 large egg
  • 1/2 cup white sugar
  • 1/4 cup apple cider vinegar
  • 1/4 cup ketchup
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups vegetable oil (for frying)
  • 1 green bell pepper chopped
  • 1 red bell pepper chopped
  • 1/2 cup pineapple chunks
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 green onions sliced (for garnish)
  • 1/4 cup water

Instructions
 

  • Whisk egg, cube chicken, then coat with flour mixture.
  • Fry coated chicken until golden and cooked through, then drain.
  • Combine sugar, vinegars, ketchup, soy sauce, and water to make sauce.
  • Sauté garlic and ginger, add peppers and pineapple, then simmer sauce.
  • Mix fried chicken into sauce, garnish with green onions, and serve.

Notes

For extra crispiness, double coat the chicken and fry at 350°F.
