Ingredients
  

Vegetables

  • 1 large butternut squash peeled, seeded, and cubed
  • 2 tablespoons olive oil divided
  • to taste salt salt
  • to taste pepper pepper

Meat

  • 1 pound ground turkey

Aromatics

  • 1 medium onion diced
  • 2 cloves garlic minced

Spices & Herbs

  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme

Greens & Cheese

  • 2 cups fresh spinach chopped
  • 1 cup shredded cheese cheddar works well
  • to taste fresh parsley parsley optional, for garnish

Instructions
 

  • Preheat oven to 400°F (200°C). Toss butternut squash with 1 tablespoon olive oil, salt, and pepper. Roast for 30-35 minutes until tender.
  • Meanwhile, heat remaining olive oil in a skillet. Sauté diced onion and minced garlic until fragrant.
  • Add ground turkey and spices; cook until browned. Stir in chopped spinach and cook until wilted.
  • Combine roasted squash with turkey mixture. Transfer to a baking dish, top with shredded cheese, and bake for 10 minutes until cheese melts.
  • Garnish with fresh parsley if desired. Serve warm.

Notes

For a vegetarian version, substitute ground turkey with lentils or tofu.
