Instructions
Preheat oven to 400°F (200°C). Toss butternut squash with 1 tablespoon olive oil, salt, and pepper. Roast for 30-35 minutes until tender.
Meanwhile, heat remaining olive oil in a skillet. Sauté diced onion and minced garlic until fragrant.
Add ground turkey and spices; cook until browned. Stir in chopped spinach and cook until wilted.
Combine roasted squash with turkey mixture. Transfer to a baking dish, top with shredded cheese, and bake for 10 minutes until cheese melts.
Garnish with fresh parsley if desired. Serve warm.
Notes
For a vegetarian version, substitute ground turkey with lentils or tofu.
