Ingredients
  

Meatballs

  • 1 lb frozen meatballs
  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 1 cup low-sodium beef broth
  • 1/2 cup sour cream (or greek yogurt)
  • 1 tsp dijon mustard
  • fresh parsley for garnish

Instructions
 

  • Melt butter in a skillet over medium heat.
  • Brown frozen meatballs for about 5 minutes.
  • Sprinkle flour into the skillet, whisk to form a roux.
  • Add beef broth, whisk until smooth, and simmer.
  • Stir in sour cream and mustard, return meatballs, and simmer.
  • Serve hot, garnished with parsley.

Notes

For a lighter option, substitute sour cream with Greek yogurt.
