Swedish Chocolate Balls

Ingredients
  

Dough

  • 4 cups rolled oats (not instant!)
  • 1.25 cups white sugar (or half brown sugar for caramel vibes)
  • 0.5 cup unsweetened cocoa powder (Dutch-processed = extra rich)
  • 1 cup unsalted butter, softened
  • 2 oz unsweetened baking chocolate, melted (or 6 tbsp cocoa + 2 tbsp oil)
  • 2 tbsp strong coffee (or chai tea)
  • 1 tsp vanilla extract
  • cup unsweetened coconut flakes (for rolling)

Instructions
 

  • Mix oats, sugar, and cocoa. Add butter, melted chocolate, coffee, and vanilla. Combine well.
  • Chill dough for 15–30 mins to firm up.
  • Scoop 1 tbsp of dough, roll into balls, then coat in coconut flakes.
  • Chill for at least 1 hour or freeze for 20 mins before serving.

Notes

Keep the dough refrigerated for best texture.
