Super Sweetpotato Lasagna

Ingredients
  

Sweetpotatoes

  • 2 pounds orange- or yellow/white-fleshed sweetpotatoes, peeled and sliced

Italian sausage

  • 1.5 pounds Italian sausage (sweet, hot, or mild), casings removed

Vegetables

  • 2 pieces onions, diced
  • 6 cloves garlic, minced

Seasonings

  • 1 tablespoon salt, divided
  • 1 tablespoon pepper, divided

Sauce and Cheese

  • 3 cups marinara sauce
  • 3 cups ricotta cheese
  • 2 large eggs, lightly beaten
  • 2 tablespoons chopped fresh oregano
  • 1 cup grated Parmesan cheese, divided
  • 1.5 cups shredded mozzarella cheese
  • 2 tablespoons chopped fresh basil

Instructions
 

  • Preheat oven to 375°F (190°C). Roast sweetpotatoes on a prepared baking sheet until tender, 15-20 minutes.
  • Cook sausage and onions in a skillet until browned and onions are tender, then add garlic, salt, and pepper; cook briefly. Stir in marinara sauce and simmer.
  • Mix ricotta, eggs, oregano, Parmesan, salt, and pepper in a bowl. Layer sauce, sweetpotatoes, ricotta mixture, and sauce in a baking dish. Repeat layers.
  • Top with mozzarella and remaining Parmesan. Cover with foil and bake for 45-60 minutes, then uncover and bake until browned, 15-20 minutes. Let stand before serving, garnished with basil.

Notes

For a vegetarian version, substitute sausage with sautéed vegetables.
