Ingredients

  • 1 batch Taco Chicken
  • 0.5 cup cooked rice (optional, for serving)
  • 4 ears sweet corn
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 large ripe avocados (diced)
  • 0.75 cup finely diced red onion (1 small onion)
  • 1 small red bell pepper (diced)
  • 1/3 cup finely chopped cilantro
  • 1 tablespoon minced garlic
  • 1 teaspoon ground cumin
  • 0.25 teaspoon crushed red pepper flakes (optional)
  • to taste Salt and pepper

Instructions
 

  • Prepare Taco Chicken following linked directions.
  • Cook the corn: grill at 400°F for 12 minutes or sauté in butter for 10 minutes until browned. Let cool and cut off the cob.
  • In a large bowl, toss cooled corn with lime juice, avocado, red onion, red pepper, cilantro, garlic, cumin, red pepper flakes, salt, and pepper.
  • Serve the avocado salsa over grilled chicken with rice if desired.
