Instructions
Prepare Taco Chicken following linked directions.
Cook the corn: grill at 400°F for 12 minutes or sauté in butter for 10 minutes until browned. Let cool and cut off the cob.
In a large bowl, toss cooled corn with lime juice, avocado, red onion, red pepper, cilantro, garlic, cumin, red pepper flakes, salt, and pepper.
Serve the avocado salsa over grilled chicken with rice if desired.
