Ingredients

  • 1 pound pasta any shape
  • 2 cups cooked corn kernels
  • 1 whole red bell pepper diced
  • 0.5 whole red onion finely chopped
  • 1 whole jalapeno pepper seeded and minced
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 0.25 cup freshly chopped cilantro
  • 1 whole lime juice of
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions
 

  • Cook the pasta according to package instructions, drain, and set aside.
  • Whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper in a bowl.
  • Combine pasta, corn, red bell pepper, red onion, and jalapeno in a mixing bowl. Pour dressing over the ingredients and toss gently.
  • Add cilantro, toss again, adjust salt and pepper seasoning.
  • Refrigerate for at least 30 minutes before serving.

Notes

For extra flavor, let the salad marinate in the refrigerator for a few hours before serving. Adjust the amount of chili powder to your desired level of spiciness.
