Instructions
Preheat oven to 400°F (200°C). Roast sweet potatoes with oil and spices for 25-30 minutes until tender and charred.
Cook corn in a hot skillet with oil until browned and slightly charred, then add garlic and cook briefly. Let cool.
In the same skillet, cook ground beef with taco seasoning and water until fully browned and saucy.
Mix lime zest, juice, mayo, sour cream, cumin, paprika, and chili powder to make dressing. Toss cooled corn with herbs, jalapeño, and dressing.
Assemble bowls with roasted sweet potatoes, topped with beef, corn mixture, diced avocado, cheese, and tortilla chips. Sprinkle Tajin if desired.
Notes
For extra flavor, char the sweet potatoes well and adjust seasonings to taste.
