Ingredients
  

for the strawberry sauce

  • 1.5 cups fresh or frozen strawberries, hulled
  • 0.25 cups granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with water

for the crust

  • 1.5 cups graham cracker crumbs
  • 0.33 cups granulated sugar
  • 0.5 cups unsalted butter, melted

for the cheesecake filling

  • 24 ounces cream cheese, softened
  • 1 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cups sour cream
  • 0.25 cups heavy cream

Instructions
 

  • Cook strawberries, sugar, and lemon juice in a saucepan until softened, then puree and thicken with cornstarch.
  • Preheat oven to 325°F (160°C) and prepare the crust with graham cracker crumbs, sugar, and butter.
  • Beat cream cheese and sugar until smooth, add eggs, then mix in vanilla, sour cream, and heavy cream.
  • Pour filling onto crust, swirl in strawberry sauce, and bake in a water bath.
  • Cool in the oven, then refrigerate for at least 6 hours before serving.

Notes

For best results, refrigerate overnight for improved texture.
