Instructions
Cook strawberries, sugar, and lemon juice in a saucepan until softened, then puree and thicken with cornstarch.
Preheat oven to 325°F (160°C) and prepare the crust with graham cracker crumbs, sugar, and butter.
Beat cream cheese and sugar until smooth, add eggs, then mix in vanilla, sour cream, and heavy cream.
Pour filling onto crust, swirl in strawberry sauce, and bake in a water bath.
Cool in the oven, then refrigerate for at least 6 hours before serving.
