Ingredients
  

Crust

  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted

Cheesecake

  • 3 packages cream cheese, softened (8 oz each)
  • 1 cup sugar
  • 1 cup sour cream
  • 3 large eggs
  • 1 tsp vanilla extract

Strawberry Layer

  • 2 cups fresh strawberries, diced
  • ¼ cup sugar
  • 1 tbsp lemon juice

Crumble

  • 1 package golden oreo cookies (about 36)
  • 4 tbsp unsalted butter, melted
  • 1 box strawberry jell-o powder (3.4 oz)

Garnish

  • 1 can whipped cream for garnish
  • 1 cup fresh strawberries for garnish

Instructions
 

  • Prepare the crust: Combine graham cracker crumbs and melted butter. Press into a greased springform pan and bake at 325°F (163°C) for 10 minutes.
  • Make the cheesecake: Beat cream cheese and sugar until smooth. Mix in sour cream and vanilla, then add eggs one at a time. Pour over the crust.
  • Bake for 50–60 minutes until the center is set. Cool completely, then refrigerate for at least 4 hours or overnight.
  • Prepare the strawberry layer: Cook strawberries with sugar and lemon juice for 5–7 minutes until thickened. Let cool.
  • Make the crumble: Crush Oreos and mix half with strawberry Jell-O powder and half with melted butter.
  • Spread the strawberry sauce over the cheesecake, then coat the sides with the crumble mixture. Garnish with whipped cream and fresh strawberries before serving.

Notes

For best results, refrigerate overnight to allow flavors to meld.
