Strawberry Overnight Oats with Coconut Milk

Ingredients
  

Oats

  • 2 cups old-fashioned rolled oats
  • 15 oz light coconut milk
  • 2 tablespoons maple syrup divided
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla paste or extract
  • 1/4 teaspoon kosher salt
  • 2 cups finely chopped strawberries
  • 1/4 cup toasted coconut flakes unsweetened

Instructions
 

  • Add oats, coconut milk, half the maple syrup, chia seeds, vanilla, and salt to a bowl. Whisk well.
  • In a separate dish, mash strawberries with remaining maple syrup.
  • Layer oat mixture and mashed strawberries in jars or containers. Cover and refrigerate overnight.
  • Top with toasted coconut flakes before serving.

Prepare the night before for a quick and healthy breakfast.
