Ingredients
for the strawberry filling

granulated sugar (or honey)

for the oatmeal crust and crumble

old-fashioned rolled oats

light brown sugar (packed)

unsalted butter, cold and cut into small cubes

honey or maple syrup (optional)

Instructions
Combine strawberries, sugar (or honey), lemon juice, cornstarch, and vanilla in a saucepan. Cook until thickened.
Preheat oven to 350°F (175°C) and prepare an 8x8-inch baking pan.
Mix oats, flour, brown sugar, baking powder, salt, and cinnamon. Cut in butter until crumbly.
Press 2/3 of the mixture into the pan, add strawberry filling, and top with remaining crumble.
Bake for 35-40 minutes until golden brown. Cool completely before slicing.
Notes
Let the bars cool completely for the filling to firm up before slicing.
