Ingredients
  

Dry ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda

Wet ingredients

  • 1 cup Strawberry Greek Yogurt (stirred)
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 2 eggs eggs
  • 4 tbsp milk

Additional ingredients

  • 2 cups strawberries (sliced)
  • 2 tbsp butter (divided)

Instructions
 

  • Mix dry ingredients in a bowl.
  • Whisk yogurt, sugar, vanilla, eggs, and milk in a separate bowl.
  • Combine wet and dry ingredients gently; do not overmix.
  • Heat 1/2 tbsp butter in a skillet, pour 1/4 cup batter, cook until bubbles form, then flip and cook 1 minute.
  • Repeat with remaining batter, top with strawberries and serve.

Notes

For extra flavor, add a drizzle of honey or syrup.
