Instructions
Pit and chop dates, pour boiling water over, cover, and set aside for 30 minutes.
Combine butter, cream, and sugar in a saucepan over medium heat; simmer 8-10 minutes until thickened. Stir in vanilla.
Preheat oven to 350°F (175°C). Blend date mixture with melted butter, add eggs one at a time, then mix in dry ingredients until smooth.
Grease waffle iron; cook waffles with heaping 1/2 cup batter. Transfer cooked waffles to a baking sheet and bake for 5 minutes.
Serve waffles topped with warm toffee sauce and optional whipped cream.
Notes
For extra flavor, toast the waffles slightly before serving.
