Instructions
Marinate steak with fajita seasoning, soy sauce, and orange juice for 25 minutes, then let rest for 5 minutes.
Cook quinoa in broth until tender, about 18 minutes, then transfer to a large bowl.
Sauté corn, jalapeno, and peppers in a skillet for 8-9 minutes, then combine with black beans and quinoa.
Cook steak over medium-high heat for 2 minutes per side, then slice against the grain and add to the salad.
Add diced avocado and lime juice, toss to combine, and serve.
Notes
For extra flavor, marinate the steak longer or add fresh herbs.
