  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon grated fresh ginger
  • 2 garlic cloves minced garlic
  • 1 teaspoon chili paste adjust based on spice preference
  • 1 tablespoon olive oil

Yum Yum Sauce

  • 0.75 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon honey
  • 2 cups cooked rice (white, brown, or jasmine)
  • 1 cup steamed broccoli
  • 1 cup shredded carrots
  • 1 cup thinly sliced red bell pepper
  • 0.25 cup chopped green onions for garnish

Instructions
 

  • Marinate chicken with soy sauce, honey, ginger, garlic, chili paste, and olive oil. Cook until browned.
  • Prepare Yum Yum Sauce by mixing mayonnaise, ketchup, rice vinegar, garlic powder, smoked paprika, and honey.
  • Assemble bowls with cooked rice, cooked chicken, broccoli, carrots, and bell peppers. Drizzle with Yum Yum Sauce and garnish with green onions.
