Instructions
Cook rice in a saucepan with broth, salt, lime zest, lime juice, and cilantro until liquid is absorbed, then fluff.
Season chicken with spices, then cook in oil until browned and cooked through, finishing with lime juice.
Prepare toppings: dice avocados, halve tomatoes, chop red onion, rinse beans, and warm if desired.
Assemble bowls with rice, chicken, beans, corn, avocado, tomatoes, onion, cheese, sour cream, salsa, and cilantro. Serve with lime wedges.
