Ingredients
  

For the Spicy Chicken

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tbsp olive oil or avocado oil
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 2 tsp garlic powder
  • 1 2 tsp onion powder
  • 1 4 to 1 2 tsp cayenne pepper
  • 1 tsp salt
  • 1 2 tsp black pepper
  • 1 tbsp lime juice

For the Zesty Cilantro-Lime Rice

  • 1 cup long-grain white rice
  • 2 cups chicken broth or water
  • Zest and juice of 1 large lime lime zest and juice
  • 1/3 cup finely chopped fresh cilantro
  • 1 tbsp butter or olive oil
  • 1 2 tsp salt

Fresh Toppings

  • 1 15 oz can black beans, rinsed and drained
  • 1 cup corn kernels
  • 2 ripe avocados, diced or sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion finely diced red onion
  • Shredded cheese cheddar, Monterey Jack, or Mexican blend
  • Your favorite salsa or pico de gallo
  • Fresh cilantro leaves for garnish
  • Lime wedges for serving

Instructions
 

  • Cook rice in a saucepan with broth, salt, lime zest, lime juice, and cilantro until liquid is absorbed, then fluff.
  • Season chicken with spices, then cook in oil until browned and cooked through, finishing with lime juice.
  • Prepare toppings: dice avocados, halve tomatoes, chop red onion, rinse beans, and warm if desired.
  • Assemble bowls with rice, chicken, beans, corn, avocado, tomatoes, onion, cheese, sour cream, salsa, and cilantro. Serve with lime wedges.
