  • 2 cups chopped carrots
  • 1 cup chopped onion
  • 1 cup red lentils, rinsed

Liquids

  • 4 cups vegetable broth (or water)

Aromatics and Spices

  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon red pepper flakes (adjust to taste)
  • 1 tablespoon olive oil

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add chopped onion and garlic; sauté until translucent.
  • Add grated ginger, ground cumin, ground coriander, and red pepper flakes; cook for 1 minute until fragrant.
  • Stir in chopped carrots and rinsed lentils, then pour in vegetable broth. Bring to a boil.
  • Reduce heat and simmer for 20-25 minutes until vegetables and lentils are tender. Season with salt and pepper.
  • Use an immersion blender to puree the soup until smooth. Garnish with fresh cilantro or parsley if desired.
