Instructions
Heat olive oil in a large pot over medium heat. Add chopped onion and garlic; sauté until translucent.
Add grated ginger, ground cumin, ground coriander, and red pepper flakes; cook for 1 minute until fragrant.
Stir in chopped carrots and rinsed lentils, then pour in vegetable broth. Bring to a boil.
