Instructions
Preheat oven to 375°F (190°C). Rub chicken with olive oil, salt, and pepper; bake for 20-25 mins until cooked.
Shred cooked chicken and toss with buffalo sauce.
Wash and dry lettuce leaves; mix Caesar dressing, chicken, celery, red onion, and Parmesan.
Place chicken mixture onto lettuce leaves, top with parsley, roll up, and serve.
Notes
For a healthier dressing, use a light or homemade Caesar dressing.
