Instructions
Preheat oven to 350°F. Drizzle 1 tablespoon olive oil in a 9x13 dish.
Mix chicken thighs with remaining oil, salt, pepper, cumin, and cinnamon. Set aside.
Add rice, onion, apple, raisins, almonds, and salt/pepper to dish. Stir to coat.
Pour broth over mixture. Place chicken on top. Cover with foil and bake 40-50 mins, then uncover and bake 20 mins until cooked.
Remove chicken, fluff rice, and serve garnished with parsley if desired.
Notes
Ensure chicken reaches 165°F for safety. Adjust seasoning to taste.
