Ingredients
  

olive oil

  • 2 teaspoon olive oil

ground turkey

  • 1 pound lean ground turkey

onion

  • 1 piece onion (chopped)

garlic cloves

  • 2 cloves garlic cloves (minced)

ground cumin

  • 1.5 teaspoons ground cumin

chili powder

  • 1 teaspoon chili powder

paprika

  • 0.75 teaspoon paprika

salt

  • 0.5 teaspoon salt

ground pepper

  • 0.5 teaspoon ground pepper

cooked brown rice

  • 2 cups cooked brown rice

canned diced green chiles

  • 3 ounces canned diced green chiles

diced tomatoes

  • 14 ounce can petite diced tomatoes

salsa

  • 1.5 cups salsa (your favorite kind)

black beans

  • 1 cup canned reduced sodium black beans, drained and rinsed

corn kernels

  • 0.75 cup corn kernels

cilantro

  • 0.25 cup minced cilantro

Monterey Jack cheese

  • 0.5 cup grated Monterey Jack cheese

Instructions
 

  • Preheat oven to 350°F (175°C). Coat a baking dish with cooking spray.
  • Cook turkey and onions in oil until turkey is cooked through.
  • Add garlic and spices; cook for 1 minute.
  • Mix in rice, chiles, tomatoes, salsa, beans, corn, and cilantro. Transfer to dish, top with cheese, and bake for 20 minutes.

Notes

For extra flavor, add a squeeze of lime before serving.
