Instructions
Preheat oven to 350°F (175°C). Coat a baking dish with cooking spray.
Cook turkey and onions in oil until turkey is cooked through.
Add garlic and spices; cook for 1 minute.
Mix in rice, chiles, tomatoes, salsa, beans, corn, and cilantro. Transfer to dish, top with cheese, and bake for 20 minutes.
Notes
For extra flavor, add a squeeze of lime before serving.
