  • 1 tablespoon olive oil

diced onion

  • 0.5 cup diced onion

lean ground beef

  • 1 pound lean ground beef

chili powder

  • 5 teaspoons chili powder (divided)

ground cumin

  • 2 teaspoons ground cumin

Kosher salt and black pepper

  • to taste salt and pepper

grated garlic

  • 1 teaspoon grated garlic

peeled and diced sweet potatoes

  • 2 cups peeled and diced sweet potatoes

fire roasted diced tomatoes

  • 14.5 ounces fire roasted diced tomatoes

diced green chiles

  • 4 ounces canned diced green chiles

water

  • 0.25 cup water

shredded cheddar cheese

  • 0.5 cup shredded cheddar cheese

cilantro for garnish

Instructions
 

  • Cook beef and onion in oil, add spices, then set aside.
  • Sauté sweet potatoes with tomatoes, chiles, water, and spices until tender (~20 mins).
  • Combine beef mixture with sweet potatoes, top with cheese, and melt. Garnish with cilantro.

Notes

Feel free to add more chili for extra heat or serve with rice for a heartier meal.
