Instructions
Heat oil, cook beef and onion with 3 tsp chili powder, cumin, salt, and pepper until nearly cooked. Add garlic, cook 1 min, then set aside.
Add sweet potatoes, tomatoes, chiles, water, remaining chili powder, cumin, salt, and pepper. Cover and simmer 20 mins until tender.
Mix beef into sweet potato mixture, top with cheese, cover until melted, then garnish with cilantro and serve.
Notes
For extra flavor, add a squeeze of lime before serving.
