Ingredients
  

olive oil

  • 1 tablespoon olive oil

diced onion

  • 0.5 cup diced onion

lean ground beef

  • 1 pound lean ground beef

chili powder

  • 5 teaspoons chili powder (divided)

ground cumin

  • 2 teaspoons ground cumin

Kosher salt and black pepper

  • to taste salt and pepper

grated garlic

  • 1 teaspoon garlic grated

peeled and diced sweet potatoes

  • 2 cups sweet potatoes

fire roasted diced tomatoes

  • 14.5 ounces fire roasted diced tomatoes

canned diced green chiles

  • 4 ounces diced green chiles

water

  • 0.25 cup water

shredded cheddar cheese

  • 0.5 cup cheddar cheese

cilantro

  • for garnish cilantro optional

Instructions
 

  • Heat oil, cook beef and onion with 3 tsp chili powder, cumin, salt, and pepper until nearly cooked. Add garlic, cook 1 min, then set aside.
  • Add sweet potatoes, tomatoes, chiles, water, remaining chili powder, cumin, salt, and pepper. Cover and simmer 20 mins until tender.
  • Mix beef into sweet potato mixture, top with cheese, cover until melted, then garnish with cilantro and serve.

Notes

For extra flavor, add a squeeze of lime before serving.
