Ingredients
  

Fruits

  • 6 pieces ripe bananas, sliced about 1/4 inch thick
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar packed
  • 1/4 cup unsalted butter, melted
  • 1/4 cup water
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch salt
  • 1 1/2 cups all-purpose flour
  • 1 1/4 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk, cold
  • 6 tablespoons unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract

Topping

  • Turbinado sugar for sprinkling

Serving

  • Whipped cream or vanilla ice cream for serving

Instructions
 

  • Slice bananas and toss with sugars, butter, water, lemon juice, vanilla, cinnamon, nutmeg, and salt; let sit 15-20 mins.
  • Mix dry ingredients; whisk wet ingredients separately, then combine.
  • Pour banana filling into a 9x13 inch dish, then top with batter.
  • Sprinkle with turbinado sugar if desired, then bake at 375°F (190°C) for 35-45 mins until golden.
  • Cool for 15-20 mins, then serve warm with whipped cream or ice cream.

Notes

For best results, use ripe bananas and ensure the cobbler is golden brown before removing from oven.
