Instructions
Mix warm water, yeast, and sugar; let sit 5 minutes until foamy. Add salt, butter, and 3 cups flour; beat 1 min. Add 3/4 cup flour; beat until dough forms, then knead for 5 min. Rest dough 10-30 min.
Preheat oven to 400°F (204°C). Divide dough into 6 pieces, roll into 20-inch ropes, cut into 1.5–2 inch pieces. Boil water with baking soda, then boil pretzels in batches for 10–15 sec. Remove and place on baking sheets, sprinkle with coarse salt.
Bake for 15 minutes until golden. Serve warm with cheese sauce or mustard.
Notes
For best results, lightly flour the work surface and avoid over-flouring the dough to keep it soft and chewy.
