Instructions
Mix water, 2 cups flour, yeast, olive oil, and salt in a bowl.
Add more flour if needed until dough clears sides of bowl.
Knead for 5-10 minutes until smooth, then let rise until doubled (~1 hour).
Divide dough into 6-8 pieces, rest covered for 10 minutes.
Roll into 6-8 inch circles and cook on a hot skillet 2-3 minutes per side.
Stack cooked flatbreads and keep warm; store cooled flatbreads in a plastic bag.
Notes
Ensure skillet is hot enough to prevent drying out.
