Instructions
Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
In a medium bowl, whisk together flour, cinnamon, baking powder, cornstarch, and salt. Set aside.
In a large bowl, cream together butter and sugars until light and fluffy. Beat in vanilla, egg, and egg yolk.
Gradually mix in the dry ingredients until a dough forms. Wrap dough in plastic and refrigerate for 10 minutes.
Roll out dough to 1/4-inch thickness. Cut into desired shapes. Place on prepared sheets, 2 inches apart.
Bake for 10-12 minutes or until edges are lightly golden. Let cool on sheets for 5 minutes, then transfer to wire rack.
Notes
For an extra chewy texture, bake for 8-10 minutes and let cool on the baking sheet for 10 minutes before transferring to a wire rack.
