Ingredients
  

Dough

  • 4 tablespoons unsalted butter softened
  • 1/3 cup brown sugar packed
  • 1 1/2 tablespoons all-purpose flour
  • 2 1/2 teaspoons ground cinnamon
  • 1 pinch salt
  • 1 cup unsalted butter softened but cool
  • 1 1/3 cups granulated sugar
  • 1 3/4 teaspoons pure vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 2 3/4 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1 teaspoon cornstarch
  • 1/4 teaspoon salt

Instructions
 

  • Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  • In a medium bowl, whisk together flour, cinnamon, baking powder, cornstarch, and salt. Set aside.
  • In a large bowl, cream together butter and sugars until light and fluffy. Beat in vanilla, egg, and egg yolk.
  • Gradually mix in the dry ingredients until a dough forms. Wrap dough in plastic and refrigerate for 10 minutes.
  • Roll out dough to 1/4-inch thickness. Cut into desired shapes. Place on prepared sheets, 2 inches apart.
  • Bake for 10-12 minutes or until edges are lightly golden. Let cool on sheets for 5 minutes, then transfer to wire rack.

Notes

For an extra chewy texture, bake for 8-10 minutes and let cool on the baking sheet for 10 minutes before transferring to a wire rack.
