Slow Cooker Stuffed Peppers

Ingredients
  

Bell peppers

  • 1 pound Ground beef Can substitute turkey or chicken
  • 2 cups Cooked rice White or brown, day-old rice preferred

Vegetables

  • 1 small Onion
  • 2 to 3 cloves Garlic Add during the last minute of cooking

Canned goods

  • 1 can Tomato sauce 15 ounces, plus extra for topping
  • 1 can Diced tomatoes Optional, adds texture
  • 1 to 2 teaspoons Italian seasoning

Seasonings

  • to taste Salt
  • to taste Pepper

Dairy

  • 1 to 2 cups Shredded cheese Cheddar, mozzarella, or a mix

Liquids

  • 1/2 cup Broth or water Helps keep things steamy

Instructions
 

  • Cut the tops off the peppers and remove seeds.
  • Mix cooked rice, ground beef, chopped onion, garlic, tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper.
  • Stuff the peppers with the mixture and place in the slow cooker. Pour broth over peppers.
  • Cover and cook on low for 4 hours. Add shredded cheese during the last 15 minutes.
  • Serve hot, topped with extra tomato sauce if desired.

Notes

For a vegetarian version, substitute the meat with beans or vegetables.
