Instructions
Cut the tops off the peppers and remove seeds.
Mix cooked rice, ground beef, chopped onion, garlic, tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper.
Stuff the peppers with the mixture and place in the slow cooker. Pour broth over peppers.
Cover and cook on low for 4 hours. Add shredded cheese during the last 15 minutes.
Serve hot, topped with extra tomato sauce if desired.
Notes
For a vegetarian version, substitute the meat with beans or vegetables.
