Instructions
Season beef chunks with salt and pepper. Optional: sear in olive oil until browned.
Place potatoes, beef, onion, and carrots (if using) in the slow cooker. Mix melted butter with garlic, herbs, red pepper flakes, and parsley; pour over ingredients.
Add beef broth, cover, and cook on LOW for 7-8 hours or HIGH for 4-5 hours until beef is tender.
Adjust seasoning if needed. For thicker sauce, mash some potatoes into the broth or let it sit uncovered for 15 minutes.
Transfer to a platter, garnish with parsley, and serve warm.
