Ingredients
  

Meat

  • 2 lbs beef chuck roast or sirloin, cut into 1-inch cubes

Vegetables

  • 1.5 lbs baby potatoes or Yukon Gold potatoes, halved

Dairy & Oils

  • 4 tbsp unsalted butter

Garlic & Herbs

  • 6 cloves garlic, minced
  • 1/2 cup beef broth

Fresh herbs: thyme and rosemary

Instructions
 

  • Season beef with salt, pepper, garlic powder, and paprika; optionally sear until browned.
  • Toss potatoes with salt, pepper, and olive oil.
  • Layer beef and potatoes in the slow cooker.
  • Mix melted butter, garlic, herbs, broth, and Worcestershire; pour over ingredients.
  • Cook on low for 8 hours or high for 4 hours until tender.
  • Garnish with parsley and serve hot.

Notes

For extra flavor, sear the beef before slow cooking.
