Ingredients
  

Protein

  • 2 pounds boneless, skinless chicken thighs or breasts

Vegetables

  • 3 diced carrots
  • 3 diced celery stalks
  • 1 diced onion
  • 4 peeled and cubed potatoes

Seasonings & Others

  • 4 cloves minced garlic
  • 4 cups low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • Salt and Pepper to taste
  • 1/4 cup flour for thickening optional

Garnish

  • Chopped fresh parsley for garnish

Instructions
 

  • Step 1: Sear the chicken in a hot skillet until golden brown.
  • Step 2: Place chicken, vegetables, potatoes, garlic, and bay leaves into the slow cooker.
  • Step 3: Add thyme, salt, and pepper; stir to combine.
  • Step 4: Pour in chicken broth; add flour if desired for thickening.
  • Step 5: Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • Step 6: Serve hot, garnished with parsley.

Notes

For a thicker stew, add flour during cooking and stir well.
