Ingredients
  

Meat

  • 2 lbs beef chuck roast, cut into 1-inch cubes

Vegetables

  • 4 medium carrots, sliced
  • 3 medium Yukon Gold potatoes, diced
  • 1 medium yellow onion, chopped

Aromatics & Liquids

  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf bay leaf
  • to taste Salt and pepper
  • 2 tsp Worcestershire sauce

Instructions
 

  • In a skillet, sear beef until browned, about 5 minutes.
  • Transfer beef and all ingredients to a slow cooker, stir to combine.
  • Cook on low for 8 hours or high for 4 hours until beef is tender.
  • Remove bay leaf, taste, and adjust seasoning before serving.

Notes

For richer flavor, let the stew sit for a few minutes before serving.
