Ingredients
  

Meat

  • 2 lbs beef chuck roast, cut into 1-inch pieces

Vegetables

  • 4 medium Yukon Gold potatoes, diced
  • 3 medium carrots, sliced
  • 1 large yellow onion, diced

Aromatics & Liquids

  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt to taste
  • 1 tsp pepper to taste
  • 1 tbsp Worcestershire sauce

Instructions
 

  • Sear beef: Brown beef chunks in a skillet over medium-high heat.
  • Prepare ingredients: Dice onions, mince garlic, slice carrots.
  • Combine: Transfer beef to slow cooker, add vegetables, herbs, sauces, and broth.
  • Cook: Cover and cook on low for 8 hours or high for 4 hours.
  • Adjust seasoning and serve hot.
