Slow Cooked SUMMER Beef Casserole Recipe

A hearty and flavorful beef casserole perfect for summer evenings, slow-cooked to tender perfection with fresh vegetables and a rich Guinness gravy.

Ingredients
  

Oil

  • 2 tbsp olive oil

Beef

  • 600 g braising beef chopped into chunks

Flour

  • 2 tbsp plain (all-purpose) flour

Salt & Pepper

  • 0.5 tsp salt
  • 0.5 tsp pepper

Garlic

  • 2 cloves garlic (peeled and minced)

Liquids

  • 330 ml Guinness or other ale
  • 360 ml beef stock

Vegetables

  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 small courgette/zucchini chopped into chunks

Cheese & Herbs

  • 3 tbsp grated parmesan cheese
  • freshly chopped parsley parsley
  • 1/4 red onion peeled and thinly sliced

Couscous

  • cooked couscous Optional flavored couscous

Instructions
 

  • Preheat oven to 160°C/325°F (fan).
  • Brown beef in a hot pan, then add garlic, Guinness, and stock. Cover and cook in oven for 3 hours.
  • Add chopped peppers and zucchini, cook for 5 minutes, then serve topped with parmesan, parsley, and red onion with warm couscous.

Notes

Ensure to check the liquid levels during cooking to prevent drying out.
