  • 1 pound chicken tenderloins or thin chicken breasts
  • 1.5 cups long grain white rice
  • 4 cups chicken broth or stock divided
  • 1 medium onion diced fine about 1 cup
  • 4 cloves garlic minced
  • 2 teaspoons garlic powder divided
  • 2 teaspoons salt divided
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.25 teaspoon onion powder
  • 0.5 teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add onion and 1/2 teaspoon salt; cook until translucent, about 5-6 minutes.
  • Add minced garlic and cook until fragrant, about 1-2 minutes. Stir in rice and cook for 2 minutes until lightly toasted.
  • Season chicken with 1 teaspoon garlic powder, 1 teaspoon salt, paprika, onion powder, and pepper. Nestle chicken into rice. Pour in 3 cups of chicken broth, bring to a boil, then cover and simmer for 20 minutes.
  • Remove lid, stir rice, add remaining broth, 1/2 teaspoon salt, 1 teaspoon garlic powder, and red pepper flakes. Cover and cook for another 10-15 minutes until rice is tender and liquid is absorbed.
  • Let rest 5 minutes, then serve. Garnish with parsley if desired.

Notes

Ensure the lid remains on during cooking to trap steam and cook the rice evenly.
