  • 1.25 cups cottage cheese prefer Good Culture for a thicker texture
  • 2 pcs eggs room temperature, about 70°F
  • 2 tbsp milk
  • 2 tbsp maple syrup
  • 1.5 tsp vanilla extract

Dry Ingredients

  • 1 cup flour King Arthur all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt

Instructions
 

  • In a bowl, combine cottage cheese, eggs, milk, maple syrup, and vanilla extract; mix until smooth.
  • In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  • Gradually add dry ingredients to wet ingredients, stirring until just combined.
  • Heat a non-stick skillet over medium heat and lightly grease.
  • Pour batter onto skillet, cook until bubbles form and edges are set, then flip and cook until golden.

Notes
