Ingredients
  

protein

  • 1 lb raw shrimp (large, peeled, and deveined - 16 or 20 count per 1 pound of shrimp)

spices

  • 1 teaspoon smoked paprika
  • 0.5 teaspoon Italian seasoning (thyme, basil, oregano, rosemary)
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

garlic

  • 5 cloves garlic (minced)

oil

  • 2 tablespoons olive oil

sun-dried tomatoes

  • 1/3 cup sun-dried tomatoes (chopped)

grain

  • 1 cup uncooked orzo

liquid

  • 2 cups chicken stock
  • 0.25 teaspoon salt

artichoke hearts

  • 14 oz artichoke hearts (drained and chopped)

vegetable

  • 4 oz fresh spinach

dairy

  • 1 cup heavy cream

salt and pepper

Instructions
 

  • Heat olive oil in a large pan over medium heat. Add garlic and spices; cook until fragrant.
  • Add shrimp and cook until pink, then remove and set aside.
  • In the same pan, add sun-dried tomatoes, orzo, chicken stock, and salt; bring to a boil.
  • Reduce heat, cover, and simmer until orzo is tender, about 10 minutes. Stir in artichokes, spinach, and heavy cream; cook until heated through.
  • Return shrimp to the pan, stir to combine, and cook for 2 minutes. Season with salt and pepper to taste.

Notes

For extra flavor, sprinkle with fresh herbs before serving.
