Instructions
Heat olive oil in a large pan over medium heat. Add garlic and spices; cook until fragrant.
Add shrimp and cook until pink, then remove and set aside.
In the same pan, add sun-dried tomatoes, orzo, chicken stock, and salt; bring to a boil.
Reduce heat, cover, and simmer until orzo is tender, about 10 minutes. Stir in artichokes, spinach, and heavy cream; cook until heated through.
Return shrimp to the pan, stir to combine, and cook for 2 minutes. Season with salt and pepper to taste.
Notes
For extra flavor, sprinkle with fresh herbs before serving.
