Ingredients
  

Bread

  • 1 piece baguette

Seafood

  • 500 g raw shrimp (26-30 count, peeled and deveined)

Cooking Oil

  • 2 tbsp avocado oil

Spices

  • 1.5 tbsp cajun spice
  • 0.5 tsp sea salt (optional) skip if cajun spice contains salt

Dips and Toppings

  • 1 cup 4-Ingredient Guacamole or 2 mashed avocados
  • 0.5 cup pico de gallo
  • 0.25 cup finely chopped fresh parsley or chives optional
  • 0.5 lime lime for squeezing

Instructions
 

  • Preheat oven to 400F (200C). Slice baguette and toast for 5-10 minutes.
  • Wash, dry, and season shrimp with avocado oil, cajun spice, and salt. Cook in a skillet over medium-high heat for 1-2 minutes per side until pink.
  • Spread guacamole on toasted baguette slices, top with pico de gallo, and add 1-2 shrimp on each.
  • Garnish with herbs and squeeze lime juice. Serve immediately.

Notes

Best enjoyed right after assembling for optimal freshness.
