Sheet Pan Maple Dijon Glazed Salmon

A delicious and easy sheet pan meal featuring tender salmon, roasted potatoes, and asparagus glazed with a sweet and tangy maple Dijon sauce.

Ingredients
  

Potatoes

  • 1 lb baby potatoes cut in half
  • 1 Tbsp olive oil
  • 3 cloves garlic minced
  • 2 tsp fresh thyme
  • Salt and pepper to taste Salt and pepper

Asparagus

  • 1 lb thin to medium asparagus ends trimmed
  • 2 tsp olive oil
  • 2 cloves garlic minced
  • 1 tsp lemon zest

Salmon fillets

  • 4 6 oz salmon fillets fresh or frozen, thawed
  • 3 Tbsp whole grain Dijon mustard
  • 3 Tbsp maple syrup or honey
  • 2 cloves garlic minced
  • 1 Tbsp lemon juice
  • 1 tsp fresh thyme
  • 1/4 tsp paprika

Instructions

  • Preheat oven to 400°F.
  • Toss potatoes with olive oil, garlic, thyme; roast 20-25 mins.
  • Toss asparagus with olive oil, garlic, lemon zest; set aside. Whisk glaze ingredients.
  • Push potatoes to one side, add asparagus and salmon. Brush salmon with glaze.
  • Bake 15 mins until salmon is cooked and asparagus tender.
  • Serve garnished with parsley and season as desired.

Notes

For extra flavor, broil for a few minutes at the end to crisp up the salmon and vegetables.
