Asparagus

thin to medium asparagus
ends trimmed

Salmon fillets

salmon fillets
fresh or frozen, thawed

whole grain Dijon mustard

maple syrup
or honey

Instructions
Preheat oven to 400°F.
Toss potatoes with olive oil, garlic, thyme; roast 20-25 mins.
Toss asparagus with olive oil, garlic, lemon zest; set aside. Whisk glaze ingredients.
Push potatoes to one side, add asparagus and salmon. Brush salmon with glaze.
Bake 15 mins until salmon is cooked and asparagus tender.
Serve garnished with parsley and season as desired.
Notes
For extra flavor, broil for a few minutes at the end to crisp up the salmon and vegetables.
