Instructions
Preheat oven to 400°F (200°C) and line a baking sheet.
Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper.
Toss potatoes and broccoli with half of the mixture and spread on the sheet.
Place chicken on the sheet and brush with remaining mixture.
Roast for 25-30 minutes, flipping chicken halfway.
Serve hot with extra lemon if desired.
Notes
For extra flavor, add fresh herbs like parsley before serving.
