  • 1 ripe avocado peeled, pitted, diced or sliced
  • 2 tbsp whole milk or plant-based milk, optional
  • 1 tbsp butter or olive oil
  • to taste Salt
  • to taste Freshly ground black pepper
  • Optional Toppings: chopped herbs, red pepper flakes, lemon juice, cherry tomatoes, toast

Instructions
 

  • Whisk eggs with milk, salt, and pepper in a bowl.
  • Heat skillet with butter or oil over medium-low heat.
  • Pour eggs into skillet, gently stir until about 80% cooked.
  • Prepare avocado by peeling, pitting, and slicing or dicing.
  • Fold in avocado, cook briefly, then serve immediately with toppings if desired.
