Instructions
Combine stuffing mix with hot chicken broth; set aside for 5 minutes.
Cook celery and onion in melted butter until softened; cool slightly.
Mix shredded chicken, sautéed vegetables, egg, pepper, and cheese into the stuffing mixture.
Preheat oven to 375°F (190°C), grease mini muffin tin, form mixture into small balls, and press into tins.
Bake for 18-22 minutes until golden and heated through; cool slightly before serving.
