  • 1 small red onion chopped, adds sharp, savory note when roasted
  • 3 cloves garlic minced, infuses aromatic flavor
  • 2 tbsp olive oil helps achieve roasted, caramelized texture
  • 1 cup brown rice cooked, hearty base

Instructions
 

  • Preheat oven to 400°F (200°C). Dice bell peppers, zucchini, and red onion.
  • Toss vegetables with olive oil, minced garlic, and seasoning. Roast for 20-25 minutes until tender and golden.
  • Cook ground turkey in a skillet over medium heat until browned, about 6-8 minutes.
  • Mix roasted vegetables into cooked turkey. Serve over warm brown rice and top with chopped herbs.
