  • 2 tablespoons Fresh Herbs (Parsley and Thyme) Chopped.

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Sauté garlic in olive oil, then add bell peppers and zucchini; cook until tender.
  • Slice chicken breasts horizontally to create pockets; season with salt and pepper.
  • Fill chicken pockets with vegetable mixture, tie with kitchen twine, and place on a baking sheet.
  • Bake for 25-30 minutes, baste halfway, then rest before serving.
