Ingredients
  

Dough

  • 57 grams unsalted butter for melting
  • 296 grams whole milk warm, about 115-120°F
  • 2 large eggs lightly beaten
  • 84 grams honey
  • 2.25 teaspoons instant yeast 1 packet
  • 1.5 teaspoons fine sea salt
  • 603 grams bread flour

Additional ingredients

  • 1 egg lightly beaten egg for brushing
  • 28 grams unsalted butter melted, for brushing
  • 21 grams honey for brushing

Topping

  • Flaky sea salt for sprinkling

Instructions
 

  • Melt butter, warm milk, and combine with eggs, honey, yeast, and salt. Add flour gradually and knead until smooth and elastic.
  • Let the dough rise in a greased bowl until doubled, about 1.5 to 2 hours. Divide into 15 pieces, shape into balls, and place in a greased pan. Let rise until doubled, about 1 hour.
  • Preheat oven to 375°F. Brush rolls with beaten egg and bake for 20-22 minutes until golden.
  • While baking, melt butter and stir in honey. Brush warm rolls with honey butter immediately after baking and sprinkle with flaky salt. Serve warm.

Notes

For softer rolls, avoid adding too much extra flour during kneading.
