Instructions
Heat olive oil in a pan over medium heat.
Add garlic and onion, sauté until fragrant.
Mix spices and add to the pan.
Add beans, corn, chicken, chiles, broth, salsa, and rice. Mix well.
Bring to a boil, then simmer covered for 15 minutes.
Top with cheese, cover to melt, then garnish and serve.
Notes
For extra flavor, add lime juice before serving.
